Ingredients

Scale
  • 4 cups fresh kale, torn into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ¼ cup red onion, thinly sliced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • ¼ cup crumbled feta cheese or ¼ cup nuts/seeds (optional)

Instructions

  1. Rinse the kale leaves under cold water and remove tough stems. Tear into bite-sized pieces.
  2. In a large bowl, drizzle olive oil over the kale and massage gently until softened.
  3. Add cherry tomatoes, cucumber, and red onion to the bowl.
  4. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the salad.
