Ingredients
- 1 cup dried green or brown lentils
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 4 cups low-sodium vegetable broth
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water.
- In a large pot over medium heat, sauté onions, garlic, carrots, and celery in olive oil for about 5 minutes until softened.
- Stir in rinsed lentils and ground cumin.
- Pour in vegetable broth and bring to a boil; then reduce heat and simmer for 30 minutes until lentils are tender.
- Season with salt and pepper before serving.
