Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream softened butter with granulated sugar and brown sugar until light and fluffy.
- Beat in eggs one at a time, followed by peppermint extract.
- Gradually mix dry ingredients into wet ingredients on low speed until just combined.
- Fold in chocolate chips and food coloring if desired.
- Drop dough onto parchment-lined baking sheets with ample space between cookies.
- Bake for 10-12 minutes until edges are golden but centers remain soft.
- Cool on baking sheet for 5 minutes before transferring to wire racks.
