Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, followed by peppermint extract.
  5. Gradually mix dry ingredients into wet ingredients on low speed until just combined.
  6. Fold in chocolate chips and food coloring if desired.
  7. Drop dough onto parchment-lined baking sheets with ample space between cookies.
  8. Bake for 10-12 minutes until edges are golden but centers remain soft.
  9. Cool on baking sheet for 5 minutes before transferring to wire racks.
