Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent (about 5 minutes).
- Add minced garlic, ground cumin, and cinnamon stick; stir for 1 minute until fragrant.
- Brown the chicken thighs on all sides (6-8 minutes) until golden brown.
- Pour in chicken broth and add dried apricots; bring to a gentle boil, then reduce heat and simmer for 30-40 minutes.
- Discard the cinnamon stick, garnish with cilantro or parsley, and serve hot.
