- 2 large eggs
- 1/2 cup shredded cheese (cheddar, mozzarella, or feta)
- 1/4 cup diced bell peppers
- 1/4 cup chopped fresh spinach
- 1/4 cup chopped onions
Instructions
- Wash and chop the bell peppers, spinach, and onions.
- In a bowl, whisk together the eggs until frothy.
- Heat a non-stick skillet over medium heat and add oil or butter.
- Sauté the onions until translucent; then add bell peppers for about two minutes.
- Pour the beaten eggs into the skillet and let cook undisturbed for three minutes until edges set.
- Add cheese and spinach on one half of the omelette; fold over and cook for another minute until cheese melts.
