- 3–4 boneless skinless chicken breasts
- 1 cup freshly grated parmesan cheese
- 1 cup seasoned breadcrumbs
- 2 large eggs
- 1 teaspoon garlic powder
- Fresh parsley (for garnish)
- Olive oil, salt, and pepper
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
- In one bowl, whisk the eggs until frothy. In another bowl, mix breadcrumbs, garlic powder, salt, pepper, and half of the parmesan cheese.
- Dip each chicken breast into the egg mixture, then coat with the breadcrumb mixture, pressing firmly to adhere.
- Arrange the coated chicken in the baking dish and drizzle lightly with olive oil.
- Bake for 25-30 minutes or until golden brown and crispy. For extra cheesiness, sprinkle remaining parmesan during the last five minutes of baking.
- Let rest briefly before serving hot with your favorite sides.
