- 3 lbs boneless chuck roast
- 2 cups low-sodium beef broth
- 4 garlic cloves, whole
- 1 large sweet onion, chopped
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp brown sugar
Instructions
- Sear the chuck roast in a skillet over medium-high heat until browned on both sides.
- Place the roast in the crock pot and surround it with chopped onion and garlic.
- Pour beef broth over the meat; add brown sugar, salt, pepper, thyme, and rosemary. Stir gently to combine.
- Cover and cook on low for 8 hours or high for 4 hours.
- Check for tenderness; if easily shredded with forks, it's ready to serve.
