Ingredients
- Whole chicken (4-5 pounds)
- Olive oil
- Fresh herbs (rosemary, thyme, parsley)
- Garlic cloves
- Lemon
- Salt and pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the whole chicken under cold water and pat dry with paper towels.
- Rub olive oil over the chicken, seasoning generously with salt and pepper inside and out.
- Place crushed garlic and fresh herbs under the skin for added flavor.
- Stuff the cavity with lemon halves and additional herbs if desired.
- Transfer to a roasting pan and roast for about one hour, or until the internal temperature reaches 165°F (75°C).
- Remove from oven and let rest for 10 minutes before carving.
