Ingredients
- 4 cups mixed salad greens (spinach and arugula)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 ripe avocado, sliced
- 1/4 cup almonds or sunflower seeds (toasted)
- 3 tbsp olive oil

- 1 tsp Dijon mustard
- 1 tsp honey

Instructions
- Wash and chop all fresh produce into bite-sized pieces.
- In a large bowl, combine mixed greens, cherry tomatoes, and cucumbers.
- Gently add the sliced avocado and sprinkle toasted nuts or seeds on top.
- In a small bowl, whisk together olive oil, vinegar, mustard, honey, salt, and pepper until emulsified.
- Drizzle the dressing over the salad mixture and toss gently to combine.
- Serve immediately in beautiful bowls or plates.
