- 1 (14.75 oz) can wild-caught salmon, drained
- 1 cup breadcrumbs (plain or seasoned)
- 2 large eggs
- 3 green onions, chopped
- ¼ cup mayonnaise (or Greek yogurt)
- 1 tbsp lemon juice (freshly squeezed)
- Salt and pepper to taste
- Oil for frying (vegetable or olive oil)
Instructions
- In a large bowl, combine drained salmon, breadcrumbs, chopped green onions, eggs, mayonnaise, lemon juice, salt, and pepper. Mix until well combined.
- Shape the mixture into small patties or balls using your hands.
- Heat oil in a skillet over medium heat until hot (around 350°F).
- Fry croquettes in batches for 3-4 minutes on each side until golden brown and crispy.
- Transfer cooked croquettes to paper towels to drain excess oil before serving.
