- 1 cup roasted sweet potatoes (mashed)
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 3/4 cup brown sugar
- 2 large eggs
- 1/2 cup milk (or dairy alternative)
- 1/4 cup vegetable oil or melted butter
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and roast sweet potatoes until fork-tender, about 45 minutes.
- Mash the cooled sweet potatoes until smooth.
- In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and brown sugar.
- In another bowl, mix mashed sweet potatoes with eggs, milk, oil or butter, and vanilla until creamy.
- Combine wet and dry ingredients gently until just mixed.
- Fill greased muffin tins two-thirds full with batter and bake for 20-25 minutes or until golden brown.
