Ingredients

  • 1 cup roasted sweet potatoes (mashed)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup milk (or dairy alternative)
  • 1/4 cup vegetable oil or melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and roast sweet potatoes until fork-tender, about 45 minutes.
  2. Mash the cooled sweet potatoes until smooth.
  3. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and brown sugar.
  4. In another bowl, mix mashed sweet potatoes with eggs, milk, oil or butter, and vanilla until creamy.
  5. Combine wet and dry ingredients gently until just mixed.
  6. Fill greased muffin tins two-thirds full with batter and bake for 20-25 minutes or until golden brown.
