Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together flour, cocoa powder, sugar, and baking powder until combined.
- In another bowl, mix eggs, brewed coffee, and vanilla extract. Combine with dry ingredients and stir until just incorporated.
- Pour the batter evenly into the muffin tin and bake for 18-20 minutes or until a toothpick comes out clean.
- For frosting, beat mascarpone cheese until smooth. Gradually add heavy cream and sugar until fluffy peaks form.
- Once cooled, generously frost each cupcake with the mascarpone mixture.
