- 8 oz penne pasta
- 2 cups ripe cherry tomatoes, halved
- 1 cup creamy feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
- In a large bowl, combine cherry tomatoes, garlic, oregano, olive oil, salt, and pepper. Toss until well-coated.
- Add the cooked pasta to the tomato mixture and gently fold in the crumbled feta.
- Transfer the mixture to a greased baking dish. Drizzle with more olive oil if desired.
- Bake uncovered for 30-35 minutes until bubbly and golden brown.
- Let sit for 5 minutes before serving. Garnish with fresh basil leaves.
