  • 1 can black beans (rinsed and drained)
  • 1 cup cooked quinoa
  • 1 bell pepper (chopped)
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)

  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, mash the rinsed black beans until mostly smooth.
  2. Cook quinoa according to package instructions; set aside to cool.
  3. Sauté onion and bell pepper in olive oil over medium heat until soft; add minced garlic during the last minute.
  4. Combine mashed beans, cooked quinoa, sautéed vegetables, spices, salt, and pepper; mix well.
  5. Shape the mixture into patties and refrigerate for at least 30 minutes to help them hold together.
  6. Grill or pan-fry the patties over medium-high heat for about 5 minutes on each side until golden brown.
