Ingredients
- 1 can black beans (rinsed and drained)
- 1 cup cooked quinoa
- 1 bell pepper (chopped)
- 1 onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a mixing bowl, mash the rinsed black beans until mostly smooth.
- Cook quinoa according to package instructions; set aside to cool.
- Sauté onion and bell pepper in olive oil over medium heat until soft; add minced garlic during the last minute.
- Combine mashed beans, cooked quinoa, sautéed vegetables, spices, salt, and pepper; mix well.
- Shape the mixture into patties and refrigerate for at least 30 minutes to help them hold together.
- Grill or pan-fry the patties over medium-high heat for about 5 minutes on each side until golden brown.
