- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, thinly sliced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped (or parsley)
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Wash all fruits and vegetables thoroughly.
- Dice the avocados into bite-sized pieces.
- Halve the cherry tomatoes and slice the cucumber thinly.
- In a large mixing bowl, combine avocados, tomatoes, cucumber, red onion, and cilantro. Toss gently.
- Squeeze lime juice over the mixture and drizzle with olive oil. Season with salt and pepper.
- Carefully toss until everything is evenly coated. Serve immediately or chill in the fridge before serving.
