Instructions
- Rinse canned black beans under cold water.
- In a large skillet over medium heat, add olive oil. Sauté chopped onion and bell pepper until soft (about 5 minutes).
- Add minced garlic and cumin; cook for another minute until fragrant.
- Stir in rinsed black beans and uncooked rice. Pour in vegetable broth and lime juice.
- Bring to a gentle simmer, cover, and cook for 20 minutes until rice is tender.
- Remove from heat, let sit for 5 minutes, fluff with a fork, garnish with cilantro if desired, then serve.
