Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C).

  3. In another bowl, mix vegetable oil and eggs until smooth. Stir in grated carrots.
  4. Gently fold the wet ingredients into the dry mixture until just combined. If using walnuts, fold them in now.
  5. Scoop the batter into lined muffin tins, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool before frosting.
