- 4 boneless, skinless chicken breasts (1.5 lbs)
- 8 oz pasta (fettuccine or penne)
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach (or veggie of choice)
- 2 tsp dried basil
- 2 tsp dried oregano
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prep your ingredients by chopping garlic and spinach.
- In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook until golden brown (6-7 minutes per side).
- Add minced garlic to the pan and sauté until fragrant.
- Meanwhile, boil salted water in another pot, cooking pasta until al dente; drain and reserve some pasta water.
- Reduce heat in the skillet, adding heavy cream while stirring gently. Gradually incorporate Parmesan cheese until melted.
- Toss cooked pasta and spinach into the skillet with the sauce; add reserved pasta water if needed to reach desired consistency.
