- ½ cup chopped walnuts or pecans (toasted)
- ¼ cup fresh parsley or dill (chopped)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper and bake for 25-30 minutes until fully cooked.
- Let the chicken cool slightly before shredding into bite-sized pieces.
- In a large bowl, mix Greek yogurt, Dijon mustard, salt, and pepper to create the dressing.
- Add shredded chicken, chopped celery, halved grapes, and nuts to the bowl; gently stir to combine without squishing the grapes.
- Cover and chill in the fridge for at least 30 minutes before serving to allow flavors to meld.
