- 6 large eggs
- 1 cup bell peppers (diced)
- 1 cup fresh spinach (chopped)
- 1 cup shredded cheddar cheese
- ½ tsp salt
- ¼ tsp black pepper
- Olive oil spray (for greasing the muffin tin)
Instructions
- Preheat your oven to 350°F (175°C) and lightly spray a muffin tin with olive oil.
- In a large bowl, whisk together the eggs until frothy.
- Fold in the diced bell peppers and chopped spinach, then add salt and pepper.
- Stir in the shredded cheddar cheese until evenly mixed.
- Pour the egg mixture into each muffin cup, filling them about three-quarters full.
- Bake for 20-25 minutes or until golden brown on top and set in the center.
- Allow to cool slightly before removing from the tin; serve warm or store for later.
