- 1 cup basmati rice, rinsed
- 2 cups low-sodium vegetable broth
- Zest of 1 lemon

Instructions
- Preheat oven to 375°F (190°C). Pat chicken breasts dry.
- In a bowl, mix olive oil, garlic, herbs, salt, pepper, and lemon zest.
- Rub herb mixture onto chicken breasts thoroughly.
- Heat a skillet over medium-high heat; sear chicken until golden brown (5 minutes each side).
- Transfer chicken to an oven-safe dish; add rinsed rice and vegetable broth around the chicken.
- Cover with foil and bake for 25-30 minutes until cooked through. Let sit for 5 minutes before serving.
