- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 3/4 cup brown sugar, packed
- 2 large eggs
- 2 tsp vanilla extract
- Your favorite ice cream (approx. 1 pint)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream the softened butter with granulated and brown sugars until light and fluffy.
- Beat in eggs one at a time and add vanilla extract.
- Gradually mix in dry ingredients until just combined; do not overmix.
- Scoop rounded tablespoons onto a lined baking sheet and bake for 10-12 minutes until edges are golden.
- Cool cookies on wire racks before assembling sandwiches with ice cream in between.
- Wrap each sandwich tightly in plastic wrap and freeze for at least 30 minutes before serving.
