Instructions
- Wash and dry all vegetables thoroughly.
- Chop the romaine into bite-sized pieces and halve the cherry tomatoes.
- Dice the cucumber and bell peppers into small chunks.
- Thinly slice the red onion; soak in cold water for 10 minutes to mellow flavor.
- In a large bowl, combine all chopped veggies.
- Drizzle with Italian dressing and toss gently to combine.
- Top with freshly grated Parmesan cheese and serve immediately or chill for 30 minutes.
