Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together softened butter and sugar until fluffy.
- Beat in egg and fresh lemon juice until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt; gradually mix into the wet ingredients until just combined.
- Gently fold in blueberries and lemon zest.
- Drop rounded tablespoons of dough onto prepared baking sheets, spaced two inches apart.
- Bake for 10-12 minutes until edges are golden but centers remain soft. Cool on wire racks.
