- 3 tbsp cold water
- 1 cup granulated sugar
- 4 large eggs
- 1 cup fresh lemon juice (about 4–6 lemons)
- Zest of 2 lemons
- Whipped cream for topping
Instructions
- Preheat oven to 350°F (175°C). In a mixing bowl, combine flour and melted butter until crumbly; add cold water gradually until dough forms.
- Roll out the dough on a floured surface to about 1/8 inch thick, then transfer it into a pie dish.
- Bake the crust with parchment paper and pie weights for 15 minutes until lightly golden.
- In another bowl, whisk together sugar and eggs until creamy; mix in lemon juice and zest until fully combined.
- Pour the filling into the baked crust and return to the oven for 25-30 minutes until set but slightly wobbly in the center.
- Allow cooling completely before topping with whipped cream.
