Instructions
- Prep all vegetables by chopping them into bite-sized pieces.
- Heat oil in a large pan over medium heat. Add cumin seeds and sauté for 30 seconds.
- Add diced onions and cook until golden brown.
- Stir in ginger-garlic paste and sauté until fragrant.
- Incorporate chopped tomatoes along with turmeric and coriander powder; cook until softened (about 5 minutes).
- Add mixed vegetables and salt, stir to combine, and cook for another 10 minutes until tender yet vibrant.
- Finish with freshly chopped cilantro before serving hot.
