- 8 oz pasta (spaghetti or penne)
- 2 cups fresh spinach
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Juice of ½ lemon (optional)
Instructions
- Cook the pasta in salted boiling water according to package directions until al dente; drain.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, then add spinach and cook until wilted.
- Reduce heat to low, pour in heavy cream, and simmer for about 3 minutes until slightly thickened.
- Add the drained pasta to the skillet and toss with the spinach sauce. Gradually mix in grated Parmesan until melted.
- Season with salt, pepper, and lemon juice if using. If too thick, add reserved pasta water to reach desired consistency.
