  • 2 cups fresh spinach
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Juice of ½ lemon (optional)

Instructions

  1. Cook the pasta in salted boiling water according to package directions until al dente; drain.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant, then add spinach and cook until wilted.
  3. Reduce heat to low, pour in heavy cream, and simmer for about 3 minutes until slightly thickened.
  4. Add the drained pasta to the skillet and toss with the spinach sauce. Gradually mix in grated Parmesan until melted.
  5. Season with salt, pepper, and lemon juice if using. If too thick, add reserved pasta water to reach desired consistency.
