- 4 medium sweet potatoes, peeled and cubed (about 1.5 lbs)
- 1/2 cup light brown sugar

- 4 tbsp unsalted butter, divided
- 1 cup mini marshmallows
- 1/4 tsp salt
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish with butter.
- Boil the cubed sweet potatoes in salted water for about 15 minutes until fork-tender.
- Drain and mash the sweet potatoes in the pot, adding 2 tablespoons of butter for creaminess.
- Stir in brown sugar, cinnamon, and salt until well combined.
- Spread the mixture evenly in the baking dish and top with mini marshmallows.
- Bake for 20-25 minutes until the marshmallows are golden brown.
