- 4 large eggs
- 1 cup whole-fat plain yogurt
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- 2 tbsp chili oil or 1 tbsp smoked paprika
- 2 tbsp fresh dill or mint, chopped
- Salt to taste
Instructions
- In a bowl, mix the yogurt with minced garlic and salt; set aside.
- Bring water to a gentle simmer in a saucepan. Crack each egg into a small bowl, then gently slide into simmering water. Cook for about 3-4 minutes until whites are set but yolks remain runny.
- In a small pan, melt butter over medium heat until bubbling. Stir in chili oil or paprika and cook for 1-2 minutes until fragrant.
- Spoon garlic yogurt onto plates, place poached eggs on top, and drizzle with spiced butter.
- Garnish with freshly chopped herbs before serving.
