Ingredients

  • 2 medium zucchinis (about 400g)
  • 2 tsp olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved (about 150g)
  • ¼ cup grated Parmesan cheese (about 25g)
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchinis into noodle-like strands using a spiralizer or julienne peeler.
  2. In a large skillet over medium heat, add olive oil. Once heated, sauté minced garlic for about 30 seconds until fragrant.
  3. Add halved cherry tomatoes and cook until they soften, approximately 3 minutes.
  4. Gently toss in the zucchini noodles and sauté for an additional 2-3 minutes until heated through but still al dente.
  5. Season with salt and pepper to taste, then remove from heat and stir in grated Parmesan cheese until slightly melted.
  6. Serve immediately, optionally garnishing with extra cheese.
