Today I'm going to show you how to make last minute Christmas dessert.

CHRISTMAS BALLS RECIPE
(makes 12-14 balls)

Ingredients:
1/2 cup quick cooking oats (45g)
1/4 cup coffee or orange juice (60ml)
3/4 cup date paste (150g)
1/4 cup cocoa powder (25g)
1/2 cup desiccated coconut (50g)
1/4 cup natural peanut butter (60g)
2 tbsp dark rum, or 2 tsp rum extract
1 tsp vanilla extract

NUTRITIONAL INFO (per ball):
109 calories, fat 5.5g, carb 13.6g, protein 2.5g

Preparation:
Place the oats and coffee in a small bowl. Soak the oats for at least ten minutes.

In a large bowl add the date paste, cocoa powder, desiccated coconut, peanut butter, rum, soaked oats and vanilla.

Mix with hand until well combined and sticky dough is formed. Place in the fridge to chill for 30 minutes.

Using a tablespoon scoop the dough, place the whole hazelnut in the middle, then roll over the nut, forming a small ball.

Roll into desiccated coconut, dip into the melted dark chocolate and sprinkle with finely chopped toasted hazelnuts, or add the hazelnuts into the melted chocolate and coat the balls.

Let it set in the fridge.
