- 2 cups mixed seasonal vegetables (potatoes, eggplant, green beans)
- 1/2 cup fresh cilantro leaves
- 1/4 cup fresh fenugreek leaves
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 2 green chilies (adjust to taste)
- 2 tbsp jaggery (or brown sugar)
- 2 tbsp mustard oil
- Salt to taste
Instructions
- 1. Prep the Vegetables: Wash and chop all vegetables into bite-sized pieces.
- 2. Sauté Aromatics: Heat mustard oil in a large pot over medium heat. Add cumin seeds and let them sizzle.
- 3. Add Vegetables & Spices: Add the chopped vegetables along with green chilies, turmeric, coriander powder, and salt. Stir well to coat the veggies in spices.
- 4. Mix in Sweetness & Freshness: Incorporate jaggery until melted, then mix in cilantro and fenugreek leaves.
- 5. Cook & Simmer: Cover the pot and simmer on low heat for 30-40 minutes, stirring occasionally.
- 6. Serve & Enjoy: Once tender, serve hot with puris or rice.
