  • 2 cups mixed seasonal vegetables (potatoes, eggplant, green beans)
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup fresh fenugreek leaves
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 2 green chilies (adjust to taste)
  • 2 tbsp jaggery (or brown sugar)
  • 2 tbsp mustard oil
  • Salt to taste

Instructions

  1. 1. Prep the Vegetables: Wash and chop all vegetables into bite-sized pieces.
  2. 2. Sauté Aromatics: Heat mustard oil in a large pot over medium heat. Add cumin seeds and let them sizzle.
  3. 3. Add Vegetables & Spices: Add the chopped vegetables along with green chilies, turmeric, coriander powder, and salt. Stir well to coat the veggies in spices.
  4. 4. Mix in Sweetness & Freshness: Incorporate jaggery until melted, then mix in cilantro and fenugreek leaves.
  5. 5. Cook & Simmer: Cover the pot and simmer on low heat for 30-40 minutes, stirring occasionally.
  6. 6. Serve & Enjoy: Once tender, serve hot with puris or rice.
