- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1-inch piece of fresh ginger, grated
- 1 cup canned tomato sauce
- 1 cup coconut milk
- 2 tablespoons curry powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Prepare all ingredients: chop onions, mince garlic, and grate ginger.
- Heat oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
- Add chicken pieces; cook until golden brown (8-10 minutes).
- Stir in garlic and ginger; cook for 1 minute until fragrant.
- Pour in tomato sauce and coconut milk; stir well and simmer for 15 minutes.
- Season with curry powder, salt, and pepper; simmer for an additional 10 minutes until slightly thickened.
