  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup fresh blackberries

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix crushed graham crackers with melted butter. Press firmly into the bottom of a springform pan to form the crust.
  2. Bake the crust for 8-10 minutes until golden brown. Allow it to cool completely.
  3. In a large bowl, beat softened cream cheese and sugar until smooth. Add vanilla extract and sour cream; mix until well combined.
  4. Gently fold in fresh blackberries, being careful not to mash them.
  5. Pour the filling over the cooled crust and smooth the top with a spatula. Cover and refrigerate for at least four hours or overnight.
  6. Once set, remove from the springform pan, slice, and garnish with extra blackberries if desired.
