Instructions
- 1. Prepare your ingredients: Wash and chop all vegetables into bite-sized pieces.
- 2. Heat the pan: In a large skillet or wok over medium-high heat, add olive oil until shimmering.
- 3. Add the chicken: Sear seasoned chicken breasts until golden brown on both sides (6-7 minutes per side). Remove from the pan.
- 4. Toss in garlic and veggies: Add garlic, bell peppers, and zucchini to the pan; stir-fry for about 5 minutes until softened yet crunchy.
- 5. Flavor it up: Drizzle soy sauce over the veggies and sprinkle with herbs as they cook down.
- 6. Return chicken to skillet: Slice cooked chicken into strips and toss back into the skillet for another minute before serving.
