- 3–4 boneless skinless chicken breasts (about 1.5 lbs)
- 12 oz fresh green beans
- 1 lb baby potatoes (mixed colors)
- 3 tbsp olive oil
- 4 cloves garlic, minced
- Salt and pepper to taste
- 1 tsp Italian seasoning (or your favorite herbs)
Instructions
- Preheat your oven to 400°F (200°C).
- Season chicken with olive oil, salt, pepper, and minced garlic.
- Wash and trim green beans; cut baby potatoes in half.
- In a large bowl, combine the seasoned chicken, green beans, and potatoes. Drizzle with additional olive oil if necessary.
- Spread the mixture on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes until the chicken is golden brown and vegetables are tender.
- Let rest briefly before serving.
