  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper.
  3. In one bowl, mix panko breadcrumbs with Italian seasoning and grated parmesan. In another bowl, whisk the egg with a splash of water for an egg wash.
  4. Dip each chicken breast into the egg wash, then coat with the panko mixture.
  5. Heat olive oil in a skillet over medium-high heat and sear each chicken breast for 3-4 minutes per side until golden brown.
  6. Place browned chicken in the baking dish, layer marinara sauce on top, then sprinkle mozzarella and additional parmesan cheese.
  7. Bake for 20-25 minutes until cheese is bubbly and golden, ensuring chicken reaches an internal temperature of 165°F (74°C).
  8. Let rest for 5 minutes before serving.
