  • 1 cup seasoned breadcrumbs
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Fresh basil leaves (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place chicken breasts between plastic wrap and pound to about 1/2 inch thick for even cooking.
  3. Set up three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs and water, and the last with breadcrumbs.
  4. Dredge each chicken breast in flour, dip in egg mixture, and coat with breadcrumbs.
  5. In a skillet over medium heat, heat olive oil and sauté breaded chicken until golden brown on both sides (about 4-5 minutes per side).
