- 4 boneless, skinless chicken breasts
- 1 cup seasoned breadcrumbs
- 2 cups marinara sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Fresh basil leaves (for garnish)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Place chicken breasts between plastic wrap and pound to about 1/2 inch thick for even cooking.
- Set up three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs and water, and the last with breadcrumbs.
- Dredge each chicken breast in flour, dip in egg mixture, and coat with breadcrumbs.
- In a skillet over medium heat, heat olive oil and sauté breaded chicken until golden brown on both sides (about 4-5 minutes per side).
- Transfer chicken to a baking dish, cover with marinara sauce, then sprinkle with mozzarella cheese.
- Bake for about 20 minutes or until the cheese is bubbly and lightly browned.
