- 3 cups cooked boneless, skinless chicken breasts, diced
- 1 cup long-grain rice
- 1 can (10.5 oz) cream of chicken soup
- 2 cups low-sodium chicken broth
- 2 cups frozen mixed vegetables
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp paprika
- salt to taste
- pepper to taste
Instructions
- Preheat the oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
- In a large bowl, mix uncooked rice, diced chicken, cream of chicken soup, and chicken broth until well combined.
- Stir in frozen mixed vegetables along with garlic powder, paprika, salt, and pepper.
- Pour the mixture into the prepared baking dish evenly.
- Cover with aluminum foil and bake for 45 minutes. Remove foil in the last 10 minutes to melt cheese on top.
- Let cool slightly before serving.
