  • 1 cup long-grain rice
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 2 cups frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a large bowl, mix uncooked rice, diced chicken, cream of chicken soup, and chicken broth until well combined.
  3. Stir in frozen mixed vegetables along with garlic powder, paprika, salt, and pepper.
  4. Pour the mixture into the prepared baking dish evenly.
  5. Cover with aluminum foil and bake for 45 minutes. Remove foil in the last 10 minutes to melt cheese on top.
  6. Let cool slightly before serving.
