Ingredients
- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 3 garlic cloves, minced
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Dice the chicken breasts into bite-sized pieces and mince the garlic.
- In a large skillet over medium heat, add olive oil. When hot, add the seasoned chicken and cook until browned (about 5-7 minutes). Transfer to a plate.
- In the same skillet, sauté minced garlic until fragrant (about 1 minute).
- Add rice and chicken broth; stir and bring to a simmer.
- Return chicken to the skillet with dried thyme; cover and reduce heat to low. Simmer for 15-20 minutes until rice is tender.
- Stir in heavy cream and heat through before serving.
