Ingredients
- 3–4 boneless skinless chicken breasts
- 4 cups fresh spinach
- 2–3 garlic cloves, minced
- 8 oz cream cheese
- 1 cup low-sodium chicken broth
- 1–2 cups shredded mozzarella and parmesan cheese
Instructions
- Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper; place in the baking dish.
- In a skillet, sauté minced garlic until fragrant; add spinach until wilted.
- Mix softened cream cheese with chicken broth until smooth; stir in sautéed spinach and half of the shredded cheese.
- Pour mixture over chicken; top with remaining shredded cheese.
- Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until bubbly.
