Instructions
- Season the beef roast generously with salt and pepper. Sear it in a hot skillet until browned on all sides.
- Transfer the roast to a slow cooker and cover halfway with beef broth. Add Worcestershire sauce and cook on low for about 8 hours until fork-tender.
- In the last hour, sauté thinly sliced onions in olive oil until caramelized.
- Shred the cooked beef and return it to the broth.
- Assemble sandwiches by loading fresh rolls with shredded beef and topped with sautéed onions.
- Serve with warm au jus for dipping.
