- 2 pounds Yukon Gold or red potatoes
- 4 cloves fresh garlic, minced
- ½ cup grated parmesan cheese
- ¼ cup extra virgin olive oil
- Kosher salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the potatoes, then cut them into uniform quarters.
- In a large bowl, toss the potato pieces with minced garlic, olive oil, salt, and pepper until evenly coated.
- Spread the seasoned potatoes on a parchment-lined baking sheet and roast for 25-30 minutes until golden brown and tender.
- Remove from the oven, sprinkle with grated parmesan cheese, and return to the oven for an additional 5 minutes until melted.
- Serve warm, garnished with fresh parsley if desired.
