Instructions

- Heat olive oil in a skillet over medium-high heat; cook marinated chicken until golden brown (about 5-7 minutes per side) until it reaches an internal temperature of 165°F (74°C).
- In another pot, boil low-sodium chicken broth; cook rinsed rice according to package instructions (about 15-18 minutes).
- Slice cooked chicken and mix back into the skillet with marinade; serve over cooked rice.
