- 1 cup all-purpose flour
- 1/4 cup granulated sugar (for crust)
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar (for filling)
- 2 large eggs
- Zest and juice of 2 lemons
- 1 tablespoon cornstarch
- 1/4 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
- In a bowl, mix flour, sugar, and baking powder. Add softened butter until the mixture resembles coarse crumbs. Press firmly into the bottom of the dish.
- Bake the crust for about 15 minutes or until lightly golden brown.
- In another bowl, whisk together eggs, remaining sugar, lemon zest, lemon juice, and cornstarch until smooth. Pour this mixture over the baked crust.
- Bake for an additional 20–25 minutes until set but slightly jiggly in the center.
- Allow cooling completely before slicing into squares.
