  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar (for filling)
  • 2 large eggs
  • Zest and juice of 2 lemons
  • 1 tablespoon cornstarch
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix flour, sugar, and baking powder. Add softened butter until the mixture resembles coarse crumbs. Press firmly into the bottom of the dish.
  3. Bake the crust for about 15 minutes or until lightly golden brown.
  4. In another bowl, whisk together eggs, remaining sugar, lemon zest, lemon juice, and cornstarch until smooth. Pour this mixture over the baked crust.
  5. Bake for an additional 20–25 minutes until set but slightly jiggly in the center.
  6. Allow cooling completely before slicing into squares.
