- 14 oz smoked sausage (kielbasa or andouille)
- 1 cup long-grain white rice
- 1 bell pepper (red or green), chopped
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 2 tsp olive oil
- 1 tsp paprika
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced smoked sausage; cook until browned.
- Add chopped onions and bell peppers; sauté until softened (about 5 minutes).
- Stir in minced garlic, paprika, thyme, and black pepper; cook for another 30 seconds until fragrant.
- Add rice and chicken broth; stir to combine. Bring to a gentle boil.
- Reduce heat to low, cover, and simmer for about 20 minutes until rice is cooked and liquid is absorbed.
- Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork.
