- 2 cups fresh spinach (packed)
- 200g paneer, cubed
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 cup tomato puree
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala
- ½ cup cream or coconut milk
- 2 tbsp oil
- Salt to taste
Instructions
- Heat oil in a pan over medium heat. Sauté the chopped onion until golden brown.
- Add minced garlic and grated ginger; cook for about 1 minute until fragrant.
- Stir in fresh spinach and tomato puree; cook until spinach wilts down.
- Transfer the mixture to a blender, add spices, and blend until smooth.
- In another pan, lightly fry the paneer cubes until golden on all sides.
- Combine the blended mixture with fried paneer, simmer for about 5 minutes to meld flavors.
