  • 2 cups fresh spinach (packed)
  • 200g paneer, cubed
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 cup tomato puree
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • ½ cup cream or coconut milk
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. Heat oil in a pan over medium heat. Sauté the chopped onion until golden brown.
  2. Add minced garlic and grated ginger; cook for about 1 minute until fragrant.
  3. Stir in fresh spinach and tomato puree; cook until spinach wilts down.
  4. Transfer the mixture to a blender, add spices, and blend until smooth.
  5. In another pan, lightly fry the paneer cubes until golden on all sides.
  6. Combine the blended mixture with fried paneer, simmer for about 5 minutes to meld flavors.
