- 1 lb lean ground beef
- 1 medium onion, finely chopped
- 2 medium carrots, diced
- 1 cup frozen peas
- 1 cup low-sodium beef broth
- 2 cups mashed potatoes (homemade or store-bought)
- 1 cup grated sharp cheddar cheese
- 1 tsp fresh thyme or rosemary, chopped
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet over medium heat, brown ground beef until fully cooked. Drain excess grease.
- Add onions and carrots; sauté until softened.
- Stir in beef broth and frozen peas; simmer for 5 minutes.
- Boil peeled potatoes in salted water until tender. Drain and mash with butter and milk; season to taste.
- Layer beef mixture in a baking dish, top with mashed potatoes, and sprinkle cheese on top.
- Bake for about 25 minutes or until golden brown.
