- 4 boneless, skinless chicken breasts
 - 1 cup long-grain rice
 - 2 fresh lemons (zested and juiced)
 - 4 garlic cloves (minced)
 - 3 cups low-sodium chicken broth
 - 1 tsp dried thyme
 - 1 tsp dried oregano
 - 2 tbsp olive oil
 - Salt and pepper to taste
 
Instructions
- Gather and prep all ingredients.
 - Optional: Sear chicken in olive oil over medium-high heat until golden brown, about 3-4 minutes per side.
 - In a slow cooker, combine rinsed rice and chicken broth; stir gently.
 - Place seared chicken on top of the rice mixture. Sprinkle with minced garlic, lemon zest, thyme, oregano, salt, and pepper.
 - Cover and cook on low for 6-8 hours or high for 3-4 hours without lifting the lid.
 - Once cooked, squeeze fresh lemon juice over the dish before serving.
