- 3–4 boneless, skinless chicken breasts
- 1 medium onion
- 2 cups fresh bell peppers (red and green)
- 1 cup pineapple chunks
- 3–4 garlic cloves
- 1/4 cup low-sodium soy sauce
- 1/4 cup ketchup
- 2 tablespoons vinegar (rice or apple cider)
- 1 tablespoon sugar
- Cooking oil for frying
Instructions
- Chop chicken into bite-sized pieces. Dice the onion and slice the bell peppers.
- Heat oil in a large skillet over medium heat. Sauté garlic and onions until translucent (about 2-3 minutes).
- Add chicken to the skillet, season with salt and pepper, and cook until golden brown (5-7 minutes).
- Mix in bell peppers and pineapple; sauté until tender-crisp (3-4 minutes).
- In a bowl, combine soy sauce, ketchup, vinegar, and sugar; pour over the chicken mixture.
- Simmer on low heat for an additional 5 minutes to meld flavors.
